Fruit Salad with Mixed Greens

½    cup sour cream

¼    cup frozen orange juice concentrate

1    tablespoon honey

1    cup strawberry — halved

1    cup apple slices

1    cup seedless grapes

1    can mandarin oranges — drained

16    ounces mixed salad greens

 

In a small bowl, combine sour cream, orange juice concentrate, honey, and mix well. Meanwhile, combine fruit in large bowl. Prepare eight plates with salad greens. Portion fruit mixture and top with cream sauce.

Cranberry Compote

4    cups cranberries — fresh

1 ½    cups water

1    cup sugar

1    tablespoon ginger — finely grated

1    tablespoon shallot — finely chopped

¼    cup light molasses

    salt — to taste

 

In a large heavy saucepan combine cranberries, 1 1/2 cups water, sugar, ginger, and chopped shallots. Stir over medium heat until sugar dissolves. Cover and cook until cranberries begin to burst, about ten minutes. Stir in molasses. Season with salt. Remove from heat and cool. Chill until cold, about three hours.
